We do not use any products that have monosodium glutamate .
Since we make most of our products and all sauces and dips and dressings ourselves, there are no additives.
A few of our products are ready made, such as gomawakame. In such a case, we choose the best possible product with the least additives and avoid azo-colors.
Our meat comes from Schwäbisch-Hall and our chicken from a local chicken farm. Fish is chosen carefully and we do not offer fish that is threatened by extinction. No blue fin tuna, no eel for example.
Our sushi rice is the best possible rice, we could find.

Lactose-free meals
Many dishes are lactose free. Sushi is lactosefree. Every day we have one dessert, that is lactose-free.
Gluten-free meals
Most of our sushi is glutenfree; many daily dishes are glutenfree.
Our kitchen menu offers daily dishes, every day at least one new glutenfree dish.
Fructose-free meals
We regularly offer dishes that are fructose free. Dishes with rice and fish, chicken, meat or vegetables have no sugar added.
People with fructose intolerance can call us ahead and we will accommodate wishes.
